With the cold air that comes with fall, I am always looking for a healthy treat that will keep me warm and toasty. When I was a kid I loved pudding but all the brands I’ve seen contain a lot of sugar. I came up with this recipe experimenting in my kitchen last week and am excited to share it. The fat in the coconut milk will give you a sweet and creamy taste without all the sugar! Don’t like coconut milk or have an allergy? Use pasture-raised grass-fed milk or another non-dairy substitute instead.

Cacao Chia Pudding with Peppermint
A healthy treat with the yummy taste of chocolate from raw cacao mixed with coconut milk a dash of honey and peppermint oil
Ingredients
- 1 can Coconut milk
- 1 cup Chia seeds
- 1/2 cup Raw cacao powder or cocoa powder
- 3 drops Peppermint essential oil
- 1 tbsp Raw honey
Instructions
- Place the coconut milk in a medium saucepan on medium heat
- Cook until it begins to boil and then mix in the chia seeds, cacao, honey, and pepermint oil until well blended
- Let cool and serve
