Watermelon Beat Garlic Salad

  • 1 cup

    Diced watermelon

  • 1 cup

    Diced roasted beets

  • 2 cups


    You can substitute another leafy green of your choice
  • 1

    Cucumber peeled and chopped into pieces

  • 1 tsp

    Red wine vinegar

  • 1 tbsp Cold-pressed extra virgin olive oil

    I like <a href="" target="_blank">California Olive Ranch</a>)

  • 2 cloves Garlic
  • 1 half

    Avocado pitted, peeled, and diced

  • 2 tbsp

    Hemp Seed 

    (I like <a href="" target="_blank">Foods Alive</a> or <a href="" target="_blank">Manitoba Harvest</a>


  • Place the greens, beets, cucumbers, watermelon, avocado in a large mixing bowl, and set aside
  • In a smaller bowl mix the olive oil, vinegar, and seasonings until well blended
  • Drizzle the dressing on top of the salad ingredients
  • Toss the dressing until it evenly covers the salad
  • Place the salad mixture into a medium-sized salad bowl
  • Top with the hemp seeds and serve
