Ingredients
- 3 medium portobello mushrooms
- 1 medium onion diced
- ½ cup shredded carrots
- ½ cup shredded purple cabbage
- ½ cup arugula minced
- 2 tbsp extra virgin olive oil (I like Bragg Extra Virgin Olive Oil)
- 2 cloves garlic diced
- 1 tsp turmeric
Instructions
- Pre-heat the oven to 400 degrees Fahrenheit
- De-stem the mushrooms and dig out a little but so there is a place to stuff the mushroom
- A baking sheet and line with parchment paper
- Place the mushrooms on the sheet so their tops are facing down
- Place the garlic, onion, arugula, carrots, cabbage, turmeric, and olive oil in a bowl and mix together
- Scoop the veggie mixture into the mushroom
- Place in the tray in the oven and cook for 20-25 minutes or until the mushroom is browned
- Let cool for 5 minutes and serve
