Veggie Stuffed Portobello


 
Ingredients
  • 3 medium portobello mushrooms
  • 1 medium onion diced
  • ½ cup shredded carrots
  • ½ cup shredded purple cabbage
  • ½ cup arugula minced
  • 2 tbsp extra virgin olive oil (I like Bragg Extra Virgin Olive Oil)
  • 2 cloves garlic diced
  • 1 tsp turmeric
Instructions
  1. Pre-heat the oven to 400 degrees Fahrenheit
  2. De-stem the mushrooms and dig out a little but so there is a place to stuff the mushroom
  3. A baking sheet and line with parchment paper
  4. Place the mushrooms on the sheet so their tops are facing down
  5. Place the garlic, onion, arugula, carrots, cabbage, turmeric, and olive oil in a bowl and mix together
  6. Scoop the veggie mixture into the mushroom
  7. Place in the tray in the oven and cook for 20-25 minutes or until the mushroom is browned
  8. Let cool for 5 minutes and serve
