Lemon, oil, and garlic are a great spices to add to make veggies taste great, but have you tried lime on veggies? The bitter taste of lime pairs very nicely with the veggies and garlic in this dish. It is a nice side for a meal or even as a snack.
- 10 cups of raw spinach or 1 lb frozen spinach
- 1 zucchini peeled and spiralized) or chopped into pieces
- 1 lime juiced
- 2 tbsp cold or expeller pressed Extra Virgin Olive Oil (EVOO) (I like California Olive Rancher)
- 3 garlic cloves chopped
- In a medium pan place the olive oil, garlic and spinach and cook on medium heat
- Saute for 5 minutes then add the zucchini noodles or pieces, top with the lime juice and continue to cook for another 15 minutes
- Let cool and serve
