Spaghetti Squash, Broccoli, and Carrot Spicy Sauté
You can add your protein of choice. For this recipe I used leftover baked chicken. It works well with beans or lentils as well

Ingredients
- 1 medium spaghetti squash cooked
- 1 cup low sodium chicken broth (I like Pacific Natural Foods Organic Low Sodium Chicken Broth)
- 2 cups of broccoli
- 1 cup of shredded carrots
- 1 tsp ground black pepper
- 1 tsp cumin
- 1 tsp turmeric
- 1 clove garlic diced
- 1 tsp of diced ginger (or ginger powder)
- 3 oz of your choice of protein
Instructions
- Add the chicken broth, garlic, and ginger to the pan
- Heat for 5 minutes
- Add the protein, broccoli, spaghetti squash, and carrots and sauté for 20 to 25 minutes
- Cook until meat is cooked and vegetables are soft
- Let cool 5 minutes and serve
