Lime Garlic Spinach & Zucchini
Jeanette Kimszal:
  • 10 cups of raw spinach or 1 lb frozen spinach
  • 1 zucchini peeled and spiralized) or chopped into pieces
  • 1 lime juiced
  • 2 tbsp cold or expeller pressed Extra Virgin Olive Oil (EVOO) (I like California Olive Rancher)
  • 3 garlic cloves chopped
  1. In a medium pan place the olive oil, garlic and spinach and cook on medium heat
  2. Saute for 5 minutes then add the zucchini noodles or pieces, top with the lime juice and continue to cook for another 15 minutes
  3. Let cool and serve
