Turkey Carrot & Zucchini Meatloaf
Jeanette Kimszal:
  • 1 lb of ground turkey
  • 1 onion diced
  • 1 cup carrots shredded (1 large carrot)
  • 1 cup zucchini shredded (1 medium zucchini)
  • 1 tsp Italian seasoning
  • 1 tsp pepper
  • 1 egg
  • 1 tsp dried parsley
  • 3 garlic cloves diced
  • Parchment paper
  1. Pre-heat oven to 400°F
  2. Take a 9" x 9" bread pan and line with parchment paper enough to fit over the sides
  3. Wash, peel, and grate the carrot and zucchini. Or place in a food processor, shred and put aside
  4. In a mixing bowl add the turkey, egg, garlic, and onion and mix well
  5. Add the shredded carrots, zucchini, pepper, and seasoning until all mixed well
  6. Place the mixture into the pan with the parchment paper
  7. Cook for 40 minutes or until golden brown
  8. A toothpick should be clean when pulled out of the meatloaf
  9. Let cool for 10 minutes and serve
