Sweet Potato Ginger Soup

  • 1 Celery stalk chopped
  • 2" ginger peeled and minced
  • 2 cups filtered water
  • 3 large sweet potatoes peeled and chopped into pieces (about 2 lb)
  • 2 cups low sodium vegetable broth
  • 3 large carrots peeled and chopped into pieces
  1. Place the sweet potatoes, celery, carrots, and onions in a large pot
  2. Add the water then cook on low until soft
  3. Add the vegetable broth
  4. Add the ginger
  5. Using an immersion blender blend until the soup is soft
  6. Serve
