Cauliflower & Purple Sweet Potato Soup

Serves: 8 servings
Ingredients
  • 1 lb frozen cauliflower thawed
  • 1.5 lb purple sweet potatoes peeled and chopped
  • 2 cups low sodium organic chicken broth
  • 1 tbsp pasture raised grass fed butter
Instructions
  1. In a large pot place the sweet potatoes and cauliflower
  2. Add the vegetable broth and butter
  3. Heat on low to medium heat until soft (about 30 minutes)
  4. Blend with the immersion blender until mixed (about 4 minutes)
  5. Let cool and serve
