Cauliflower & Purple Sweet Potato Soup
  • 1 lb frozen cauliflower thawed
  • 3 purple sweet potatoes
  • 2 cups low sodium vegetable broth
  • 1 tbsp pasture raised grass fed butter
  1. In a large pot place the sweet potatoes and cauliflower
  2. Cook until soft
  3. Add the vegetable broth and butter
  4. Blend with the immersion blender until mixed
  5. Let cool and serve
