Chili Lime Broccoli & Sweet Potato Portobello Burger
 
 
Ingredients
  • 3 broccoli crowns shredded
  • 2 sweet potatoes shredded
  • Chili lime seasoning
  • 1 Lime juiced
  • 2 garlic cloves chopped
  • 1 egg
  • 8 mini portobello mushrooms stems cut out of the center
  • Chili Lime Seasoning Directions
  • 1 tablespoon paprika
  • 1 teaspoon lime zest approximately ½ lime.
  • ½ teaspoon ground cumin.
  • ¼ teaspoon cayenne pepper powder.
  • ¼ teaspoon garlic powder.
  • ¼ teaspoon onion powder.
  • ¼ teaspoon ground coriander.
  • ¼ teaspoon sea salt
Instructions
  1. Pre-heat the oven to 400 degrees Fahrenheit
  2. Take all the chili lime seasonings and mix well in a small bowl
  3. In a large bowl take the broccoli, egg, and sweet potato and put in a bowl, add the chili lime seasoning, lime juice and mix well
  4. Place the portobello mushroom cap on a baking sheet
  5. Place the veggie mixture and place on top of the mushroom, top with another mushroom
  6. Repeat until all the burgers are complete
  7. Place in the oven for 45-40 minutes
  8. Let cool and serve
