Spaghetti Squash, Broccoli, and Carrot Spicy Sauté
 
 
You can add your protein of choice. For this recipe I used leftover baked chicken. It works well with beans or lentils as well

Ingredients
  • 1 medium spaghetti squash cooked
  • 1 cup low sodium chicken broth (I like Pacific Natural Foods Organic Low Sodium Chicken Broth)
  • 2 cups of broccoli
  • 1 cup of shredded carrots
  • 1 tsp ground black pepper
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 clove garlic diced
  • 1 tsp of diced ginger (or ginger powder)
  • 3 oz of your choice of protein
Instructions
  1. Add the chicken broth, garlic, and ginger to the pan
  2. Heat for 5 minutes
  3. Add the protein, broccoli, spaghetti squash, and carrots and sauté for 20 to 25 minutes
  4. Cook until meat is cooked and vegetables are soft
  5. Let cool 5 minutes and serve
