Creamy Broccoli and Pea soup
Ingredients
- 3 crowns of broccoli
- 1 pound of frozen peas
- 2 cups low sodium vegetable broth
- 2 cups water
- 2 cloves garlic chopped
- 1 tbsp organic grass fed butter (use coconut oil if you are vegetarian or vegan)
Instructions
- Directions
- Take the broccoli and break into small pieces
- In a large pot combine the broth, broccoli and peas
- Add the garlic
- Sauté for 35 minutes until soft
- Add the emersion blender and blend until all the broccoli and peas are mashed
- Add the water and stir to thin out a bit
- Add pepper for taste
- Cook for another 5 minutes
- Then serve
