Baked Carrot Parsley Fries
Fall has set in and that means there is a whole new crop of veggies to choose. This season one of my favorites is carrots. One of my favorite. This veggie has a ton of nutrition including the nutrients potassium and B vitamins to help with blood pressure regulation and energy production. They also contain the anti-oxidant beta-carotene. This recipe is great if you are looking for a sweeter snack without any added sugar. Another bonus is that you will be getting additional antioxidants from the spice parsley.

Ingredients
  • 3 Large carrots
  • 1 tbsp extra virgin olive oil (I like California Olive Rancher)
  • 1 tsp ground black pepper
  • 1 tsp parsley
  • Parchment paper
Instructions
  1. Pre-heat oven to 400 degrees Fahrenheit
  2. Take carrots wash and pat dry
  3. Cut the tops and bottoms off of the carrots
  4. Peel the carrots and cut in half, then quarters pieces the are 1 inch thick
  5. Place carrots in a bowl with extra virgin olive oil
  6. Toss in parsley and pepper
  7. Place carrots on baking sheet and cook for 20 minutes
  8. Let cool for 10 minutes and serve
