Fall has set in and that means there is a whole new crop of veggies to choose. This season one of my favorites is carrots. One of my favorite. This veggie has a ton of nutrition including the nutrients potassium and B vitamins to help with blood pressure regulation and energy production. They also contain the anti-oxidant beta-carotene. This recipe is great if you are looking for a sweeter snack without any added sugar. Another bonus is that you will be getting additional antioxidants from the spice parsley.
Baked Carrot Parsley Fries

Ingredients
- 3 Large carrots
- 1 tbsp extra virgin olive oil (I like California Olive Rancher)
- 1 tsp ground black pepper
- 1 tsp parsley
- Parchment paper
Instructions
- Pre-heat oven to 400 degrees Fahrenheit
- Take carrots wash and pat dry
- Cut the tops and bottoms off of the carrots
- Peel the carrots and cut in half, then quarters pieces the are 1 inch thick
- Place carrots in a bowl with extra virgin olive oil
- Toss in parsley and pepper
- Place carrots on baking sheet and cook for 20 minutes
- Let cool for 10 minutes and serve
